Firstly I’m wondering what the content of this subject is likely to be given that it’s a Chef Ausbildungand secondly if there are any grounds on which I can get out of it.
Presumably philosophy would be OK if they do it. Maybe just ask what the alternatives are. If you’re Catholic, you can see what will be the berugsschulordnung in the official curriculum, from page 16 in this file: If you’re Lutheran, from page 14 beerufsschulordnung here: In both cases it’s mainly “turn the other cheek” stuff from the New Testament, how to deescalate conflict, and so on.
You will have a lot of more difficult subjects, in which you will have worse marks – can you really afford to lose a subject with a guaranteed good mark?

Just for the record: Make sure you really know what you’re learning. You’ll be a “cook”, when you’re done with the apprenticeship Unless you’re berufsschulordunng to the Meisterschule. It might be that for some English speakers “Chef” and “Cook” is interchangeable, but not in a professional environment.
Head chef, sous chef, pastry chef, blah blah, you would know your own title in a big kitchen. It may or may not include the word ‘chef’.
